I think this might be my favourite sweet treat yet! A little bit salty, a little bit sweet and completely guilt free…the best bit about this peanut butter bark is that it literally takes 20 minutes from start to finish. Get into it!
LUXE / HEALTH Salty Peanut Butter Bark
4 tsp. peanut butter (smooth or crunchy – whatever tickles your fancy!)
2 tsp. rice malt syrup
1/3 cup coconut oil, melted
Handful coconut flakes, plus a few extra to sprinkle on top
- In a small bowl, mix the peanut butter, rice malt syrup, coconut oil and a handful of coconut flakes.
- Line a baking tin with baking paper, then pour the peanut butter mixture into the tray.
- Crack a generous dose of sea salt over the top (I give it 8-10 good twists as I like it salty!), then sprinkle a few extra coconut flakes over the top.
- Pop it in the freezer to set for at least 20 minutes, then break apart and scoff quickly.
