LUXE / HEALTH Peanut Butter Fudge Slice

Ingredients:

For the base:
2 tbsp. buckinis
2 tbsp. raw unsalted peanuts
1 tbsp. shredded coconut
2 tbsp. melted coconut oil
2 tsp. rice malt syrup

For the peanut butter fudge layer:
4 tsp. smooth peanut butter (organic, unsalted is best)
2 tsp. rice malt syrup
1/3 cup melted coconut oil
Handful of raw unsalted peanuts
Generous crack of Himalayan sea salt

For the chocolate layer:
1 tbsp. cacao powder
1 tsp. rice malt syrup
1/8 cup melted coconut oil

Method:

  • First up, line a small baking dish with baking paper – the smaller the dish, the chunkier your slice will be but it’s entirely up to you as to how thick you’d like each layer!
  • Then, in a food processor, blend all the base ingredients together until they are well mixed and sticky.
  • Press the sticky mixture evenly into your baking paper lined dish then pop in the freezer for 5-10 minutes to firm up while you prep the fudge layer.
  • Mix all the peanut butter fudge ingredients together until they’re smooth, then pour over your cooled base layer and place back in the freezer for 15-20 minutes until firm.  You don’t want it frozen solid, but it needs to be firm enough that the chocolate layer sits on top.
  • Finally, mix all the chocolate layer ingredients together until the chocolate is runny and smooth then pour over your cooled fudge layer and place back in the freezer for 1-2 hours to set.
  • Cut into chunky squares and devour!  Keep any leftovers in the fridge for 3-4 days…if it lasts that long.
